MANCHEGO CHEESE - SPANISH CHEESE
MANCHEGO 3 MONTHS

For three months our Manchego Cheese ages naturally, gradually forming its yellowish golden rind and an ivory colored cheese with a rich, buttery flavor. This flavor and perfume are obtained by using milk from only select herds of pure Manchega sheep and the cheese carries the D.O. ( Denomination of Origin ) seal of quality .

MANCHEGO 6 MONTHS

MANCHEGO 1 YEAR

A full year of sealed curing, with the guaranty of the DENOMINATION OF ORIGIN MANCHEGO CHEESE, gives to our first class cheeses the strong and a characteristic smell of the milk originating from selected livestocks of purely "manchego ewes". With the exquisite flavor and bouquet of authentical and traditional MANCHEGO CHEESE.

IBÉRICO CHEESE

Traditional Cheese produced from cow´s, goat´s and sheep´s milk:
-cow´s milk: 50 % min.
-goat´s milk: 30 % min.
-sheep´s milk: 10 % min..

Varieties:
-Ibérico Cheese Medium Aged: aged 45 days
-Ibérico Cheese Aged: aged six months.
Two types: all of which are flavorful, refined and creamy; ideal for everyone's palate.

TRONCHON CHEESE
Cheese produced from cow´s, goat´s and sheep´s milk. Soft and creamy.

BLENDED AND SPECIAL CHEESES

Cheese produced with a blend of cow´s, goat´s and sheep´s milk.
The flavor is refined and creamy. Ideal for all tastes.

Varieties:
-Young: semi-soft cheese, mild flavor, aged 15 days
-Medium aged: flavorful with a nice aroma, aged 45 days
-Aged and packed in olive oil, aged six months.
-Cheese in 300 g. vacuum-packed wedges
-Cheese in virgin olive oil in a dispaly container with 11 wedges

PURE GOAT CHEESE
Originating from the region of Toledo Mountains in Central Spain, with a special manufacturing process and with the target of the typical smell and the unique flavor cheeses from the goat milk, at one time soft and buttery.

Varieties:
- Aired vacuum and medium aged.
- Cheese in 300 g. vacuum-packed wedges .

GOAT´S MILK CHEESE
 
    A soft ripened cylindrical log produced with pasteurized select goat´s milk from the region of Toledo in Castilla La Mancha. Aged around 20 days, the cheese is finished with an edible white mold rind. The cheese is compact with no eyes. The texture is dense & smooth yet the cheese dissolves in the mouth, coating it with the proper balance of sweetness and acidity.

    GOAT & SHEEP´S MILK CHEESE
 
    A unique soft ripened cheese in that it blends both the finest goat's and sheepás milk from the region of Toledo in Castilla La Mancha. Aged around 20 days, the cheese is finished with an edible white mold rind. The cheese is compact with no eyes. The texture is lighter than the all goat milk variety and the finish is buttery due to the addition of the sheep´s milk.
